The RiverGrille on the Tomoka is a popular restaurant in Ormond Beach, Florida that overlooks the lovely Tomoka River. This haven is known as the place to go to savor delectable Florida cuisine with a touch of Cajun spice in a cozy and rustic dining room or outdoors in their expansive multi-level deck. The food offered ranges from fresh seafood and steaks, to tasty appetizers, burgers, and hand crafted cocktails and much more.

Stephen CarnelliOne of the people working behind the scenes to serve up this delicious fare is Stephen Carnelli, kitchen manager and chef.

Stephen started at the RiverGrille about 8.5 years ago as a simple fry cook. Chef and general manager Frank Perry took Stephen under his wing and shared with him his culinary knowledge and taught him several different culinary styles from around the world. Over the course of Stephen’s first 4 years at the restaurant, he learned all aspects of the kitchen from purchasing to presenting, which led to his promotion to Kitchen Manager & Chef- he oversees all kitchen activities.

General Manager, Frank Perry, had this to say about Stephen: “It’s always rewarding to teach someone who shares the same work ethic and culinary drive. Over the years I’ve seen and felt the quality of work ethic really dwindle. I am always thankful to have such a great student and employee in Stephen.”

 

Here is a recipe Stephen is sharing with us for a Shrimp & Crab Boil.

Recipe follows:

Ingredients:
2 cups Beer
Seasoning Blend
1/2 lb. Snow Crab
1/2 lb. Peel n Eat Shrimp
1 corn Cobbett
2 cut Potatoes
1 Tbsp. Butter
2 oz. Andouille Sausage

Seasoning Blend:
1/2 cup of Old Bay
1/8 cup of bay leaves
1/8 cup of whole black pepper
1/4 cup Cajun seasoning
1/8 cup of whole cloves
3 Tbsp. Paprika
1 Tbsp. Cayenne

Mix the seasoning together, these will be used to flavor our boil pot, just make sure to save 1/8 cup off to the side for later. (Amounts can be adjusted and/or omitted to meet your own personal flavoring)

On your stove fill a pot with water and add your seasonings and 2 cups of beer. Bring to a boil. Add the corn and potatoes & cook until corn is hot to the center (approx. 9 minutes). Place the Sausage, Shrimp & Crab into the pot & cook for approx. 2 minutes. When cooking is complete remove the Crab, Shrimp, Corn, Sausage & Potatoes into a bowl and add your remaining seasons and butter. Toss together to evenly coat all of the food with the spiced butter. Pour this into your preferred serving vessel, making sure to have an extra bowl ready for shells. Enjoy!
